BBQ Citrus Skewers

As summertime approaches it's a good idea to get out that grill. You may think grilling isn't a good option while on our MediLean program, but that just isn't the case. BBQing is a fantastic way to cook your food with no added fat. Break out that Barbecue and grill these yummy citrus skewers.

What you'll need:

A BBQ

Skewer sticks (metal or wood, if you use wood make sure to soak them first)

31/2 oz raw chicken breast cut into small chunks

3 small pieces of white onion (allowed amount for seasoning)

1 zucchini sliced into chunks

Italian seasoning

1 Lemon

Directions:

Make skewers by rotating chicken, and zucchini, and place 1-2 onion slices on each skewer. Squeeze lemon juice all over skewers and sprinkle a small amount of Italian seasoning. Grill until chicken is cooked all the way through.
